A quick update: made waffles again this morning, using Bob's Red Mill 7-grain pancake and waffle mix. One batch of batter prepared to the recipe on the bag makes just under three full waffles in our waffle iron. And none of them stuck at all, this time! The 7-grain mix is pretty good, too, although I think I might try the egg white trick with it to see if that's responsible for the crispier waffles I got out of the first batch.

Wow. We're fans of cast iron (follow my name-link to see evidence) but I am not sure I even knew such a thing existed. Cool.

Cook's Illustrated has a waffle recipe in next month's issue. It calls for sour cream and seltzer water. Sounds like it could be tasty, but I want waffles now, damn it, not after going to the store to get seltzer water. Who the hell has seltzer water readily available?
